I made loaded protein muffins yesterday. All I can say is Yummy !! They are very tasteful and filling. They are full of protein and make for an amazing snack or meal.
Ingredients:
- 1 cup mashed banana approx 2 large bananas
- 1 egg
- 3 tablespoons coconut oil melted + cooled
- 3/4 cup flour
- 1/2 cup peanut butter whey
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 teaspoons honey (optional)
Instructions:
- Preheat oven to 350 and prepare a lined or greased muffin tin.
- In a bowl, mash bananas until smooth. Stir in egg, and coconut oil until combined.
- Add in flour, protein powder, baking powder, baking soda and cinnamon. Stir until combined.
- Pour batter into cups, filling 3/4 of the way. Do not overfill!
- Bake muffins for 15 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center of the muffin and then enjoy!!
Notes:
To make vegan: replace 1 egg white with 1 flax egg. Sub honey with maple syrup, use vegan protein powder .
If you don’t have a muffin tin or baking tray you can use empty and washed tuna tins as we did.
